This delicious, refreshing freshly squeezed raspberry mint lemonade is an easy to make lemonade recipe!

That seems to be my mantra these days. I’m not quite ready to think about getting back into the hectic swing of life and school and the routines.

For one thing, there is still a lot to do on my “summer to do” list.

I have all sorts of plans for getting really organized for back to school. And I’ll get there.

After just one more relaxing afternoon on the dock. Reading books. Swimming. Kayaking with my kids. And eating and drinking all those awesome summertime foods an drinks.

Like my favourite freshly squeezed raspberry mint lemonade.

Made with fragrant mint leaves that grow wild on our beach. {Not sure how they got there but that’s a whole other story}

It’s literally like summer in a glass.  This delicious homemade lemonade recipe.

Start by gathering your supplies.

You will need fresh mint leaves, fresh raspberries (ideally), and about 5-6 lovely lemons. You’ll also need a lemon juicer, a muddler, a pitcher {I like the type that has a separate ice container inside it like this one}, and some simple syrup (super easy to make – instructions below).

Freshly Squeezed Raspberry Mint Lemonade

Ingredients

  • 1 cup sugar
  • 1 cup water
  • 5-6 lemons
  • 5 more cups water
  • fresh mint leaves

Instructions

  1. Make simple syrup by combining the water and sugar in a saucepan over medium heat, stirring until dissolved (1-2 minutes). Let it cool completely in the fridge (or freezer if you are in a hurry). It should make about 1.5 cups of simple syrup.
  2. Use a lemon juicer to squeeze the juice from your lemons and then strain the lemon juice to remove the seeds and pulp. Press and squish the pulp down in the strainer to make sure that you get all the juice out of the lemons.
  3. Pour the juice into a pitcher and mix with the five cups of water. Add the simple syrup - start with about a cup of it and test the lemonade for sweetness. Add more as per your taste.
  4. Muddle a few raspberries and mint leaves in each cup. Add ice. Pour the lemonade on top and give it a gentle stir. Alternatively, you could muddle all the raspberry and mint a pitcher and then pour the lemonade over if you want to serve the whole pitcher at once.
  5. Garnish with a lemon or mint leave, and add a straw. Enjoy!
  6. You could also make this a delicious summer cocktail by adding a jigger of vodka to the glass before you add the lemonade!

After you’ve made your freshly squeezed homemade lemonade, you can either make a whole pitcher of raspberry mint lemonade, or add the extra flavours to each glass. If you aren’t going to drink the whole pitcher right away {i.e. sharing it with a group, not sucking back the whole thing yourself} then I recommend adding the mint and raspberry to each glass as you go.

Add the fresh raspberries and mint to the bottom of the glass, muddle them to squeeze out the juices and flavours, and pour the freshly squeezed, chilled lemonade over top.

You can add some ice, and even a little garnish is you like. A straw is nice too.
