This Ain’t Your Mama’s Caesar Salad {& 12 Summer Back Yard BBQ Must Haves}

Hi y’all! I hope you had a fabulous weekend. I took a bit of an extended break from the blog as yesterday was Canada Day so it kind of felt like a loooooong weekend – and now that school is officially out I guess it will be a really long weekend! 9 weeks long, that is. We had a wonderful time this weekend and enjoyed some really fabulous hot weather on both Monday and Tuesday – it finally truly felt like summer is here. We went swimming, boating, watched a Canada Day parade, and went to two BBQs… what more could you ask for?!

And what are the best things about summer? Well, besides the sunshine and swimming, I would say summer barbeques with friends and family rank right up there. And whenever I need to make a salad for a BBQ I think of this amazing Caesar recipe developed over the years by my sister-in-law, Danielle. I convinced her to let me share her recipe with the world because, honestly, it is that good. I hope you love it as much as we do!

The key to this amazing salad is the dressing.

I LOVE this dressing.

You could use it on so much more then just salad, but it is amazing for Caesar salad none-the-less.

To make the dressing I used:

1/2 cup of real mayonnaise
1/2 cup of olive oil
2 tbsp. of red wine vinegar
1 tbsp. of Dijon mustard
2 tsp. of Worcesteshire Sauce
the juice squeezed from 1 lemon
anchovy paste – about 5″ squeezed from the tube or 1 can, minced and crushed
6-8 cloves of garlic, pressed
1/4 cup of Kraft parmesan cheese (shredded) – this is optional but a great thickener
salt and pepper to taste

For the salad:

Romaine Lettuce (I used three heads for a giant BBQ party sized salad)
2 ripe avacadoes, diced
1 pkg of cherry tomatoes, washed and halved

Optional for dressing the finished salad:

2 tbsp. of capers
1/4-1/2 cup of real grated parmesan cheese
croutons

To make it:

Make the dressing by simply adding the dressing ingredients into a bowl in the order listed, and then mix with a whisk until fully mixed (or emulsified).

This makes enough dressing for 1-2 very large salads for a couple of BBQ events, or maybe 6 salads made for a family of 4. I store my extra dressing in a mason jar in the fridge- it can last up to about 2 weeks.

Part of what makes this Caesar salad recipe so delicious is the addition of a few non-traditional veggies, like avocado and cherry tomatoes.

After thoroughly washing the lettuce, I chopped it and then sliced the avocado into small pieces and cut the cherry tomatoes in halves.

Then I simply tossed some of the delicious homemade dressing onto it – and added some real grated parmesan cheese and capers on top. It would be delicious with some homemade croutons as well, but because I was making this for a party with some ‘gluten-free’ friends, I left them off.

It really is super delicious, and the dressing is wonderful on anything- chicken, potatoes…whatever else you think could use a little excitement!
