Caramel Apple Cupcakes {from a mix} with Caramel Buttercream Frosting

Today I’m sharing a simple and delicious recipe for making caramel apple cupcakes from a golden cake mix as well as the recipe for creamy and smooth caramel buttercream frosting to top them with.

Normally I’m not much of a “sweet” eater, preferring savoury treats myself… but one of my boys absolutely adores sweet treats.  So much so, that we gave him caramel popcorn and homemade style fudge from our local candy shop as part of his birthday present this past weekend!

He gets so over-the-top excited if I ever bake anything sweet that it definitely inspires me to bake once in a while, despite the fact that I never care about eating it myself.  Maybe it’s better that way? He certainly expends enough energy in his daily activities to take care of the energy from the odd sweet treat.

But even my “non-sweet eater” child loved these delicious caramel apple cupcakes; maybe because the hint of green apple makes them slightly less sweet as it adds a tart and fresh flavour to the mix.  I hope you enjoy these scrumptious cupcakes as much as we did!

These yummy  caramel apple cupcakes (made from a mix!) with buttercream frosting have been making an appearance in my boys’ lunches this week. I’m definitely gaining in my popularity as resident lunch maker around here (though they don’t have many other options, regardless;).  They’d also be a fun treat to serve at any kind of fall party or gathering, but caramel apples don’t have to be relegated to only the fall – I think these would be delicious to serve any time of year.  I mean, caramel?! Right?

I started out with a basic golden cake mix and beefed up the flavour with diced, tart green apples as well as caramel chips.  Follow the package instructions and keep an eye on the baking time, as it may need to be slightly longer with the addition of the apples.

Caramel Apple Cupcakes

A simple and delicious fall cupcake recipe that uses a golden cake mix as base.

Ingredients

  • 1 box golden cake mix
  • 3 eggs or whatever amout your box mix calls for
  • 1 cup milk or water or whatever amout your box mix calls for
  • 1/4 cup oil or whatever amout your box mix calls for
  • 1 large tart green apple, peeled and chopped
  • 1 cup caramel chips

Instructions

  1. Mix the box of golden cake mix with the required ingredients and according to the package instructions.

  2. Stir the apple and caramel chips in by hand.

  3. Fill the cupcake pan 2/3 of the way up the cupcake trays and bake according to the time on the package. You may need to add a couple of minutes cooking time, so keep an eye on them at the end and test with a toothpick for doneness.

Start by making the caramel that you will add into the icing sugar to create the delicious caramel buttercream frosting.  It needs to cool before you can mix it with the icing sugar, so starting with this step first saves time waiting later on.

After baking, I let the cupcakes cool and whipped up the caramel buttercream icing by adding the (now cool) caramel mixture to the icing sugar.

Caramel Buttercream Frosting

A smooth and delicious caramel flavoured buttercream icing.

Cook Time 5 minutes

Ingredients

  • 1 cup brown sugar
  • 1/2 cup butter, cut into sections
  • 1/4 cup milk
  • 3 cups powdered icing sugar

Instructions

  1. Make the caramel sauce first. Mix the sugar, butter, and milk in a heavy saucepan and whisk together gently over low heat until the butter and sugar melts into a liquid.

  2. Turn the heat up to medium and cook for about 5 minutes until the center bubbles and the mixture begins to thicken.

  3. Put the caramel mixture aside and let cool until it's at room temperature.

  4. Pour the caramel into the stand mixture, and gradually add the powdered sugar to the mixer until it's well mixed and is a creamy and smooth texture.

  5. Once the cupcakes have cooled, pipe the icing onto each of them (or apply with a butter knife for less icing). Garnish each with a slice of green apple and a drizzle of caramel sauce.
