Cherry Vanilla Homemade Ice Cream without a Machine

Today I’m sharing a super quick and easy recipe to make the most delicious cherry vanilla homemade ice cream without a machine!

One of the best parts of late summer is the variety of fresh ripe fruits and vegetables in grocery stories and at farm markets. Cherries are one of my most favourite summertime fruits, and I think my love for them may just reach back to my days in-utero.

My Mom tells the story of the road trip that she and my Dad took through the BC Okanagan Valley when she was pregnant with me.  It just happened to be during cherry season.  She says that she ate so many fresh-off-the-tree Bing Cherries that her hands and feet started to turn purple.

It might be an exaggeration, but it could also explain why I wait with bated breath for the local cherries to hit the grocery stores and farm markets each summer.  Cherry also happens to be my favourite flavour of ice cream and I am excited to share this super easy and incredibly delicious 3-ingredient cherry vanilla ice cream that you can make without a machine!  Not only is it easy and delicious, it’s also healthier than traditional ice creams because it’s made with just low-fat sweetened condensed milk, vanilla, and, you guessed it, cherries!

A good blender is key to making this without a machine. I have a Ninja blender – not a super expensive or fancy one – but it works perfectly well for this purpose.

After freezing the ice cream again, it’s really easy to scoop it right out of the freezer if you run your ice cream scoop under some hot water first.

You can use freshly picked cherries (or even substitute another favourite fruit), but for best results freeze the cherries (or other fruit) for several hours before blending.

My sons did a taste test between my homemade 3-ingredient cherry vanilla ice cream and the regular dark cherry ice cream that we buy at the grocery store.  Guess what?! They both preferred my homemade, hands down. One point for Mom!

I’d love to try this with a bit of dark chocolate shredded into it, or even on top of it.  I’m also going to try the recipe with some different frozen fruits and see how it comes out.  I promise to share any other amazing ice cream combos that we come up with.
