Easiest Instant Pot Chicken Vegetable Bean Soup

Today I’m sharing my favourite new fall recipe: easy instant pot chicken vegetable bean soup. This comes in at ZERO Weight Watchers points, and is the perfect take to work food to fill up with for lunch.

What a start to fall it has been!

I think that because I’m a teacher and have existed on a school-year schedule for nearly as many years as I can possibly remember, I tend to think of the fall as as fresh start. It’s all about goal setting and positive healthy changes!  I’ve been super keen this fall to start working out again and have been trying my best to make positive and healthy food choices 95% of the time! I figure 95% is pretty good, right?

So part of that has been getting really organized to meal plan and food prep ahead of time on the weekends. I love to cook up a bunch of chicken breasts to have on hand for salads and quick healthy meals, but with the onset of Fall I find myself starting to crave warmer meals to fill my belly during those rainy, cool days.

Enter this super quick and easy instant pot chicken vegetable bean soup! Not only is it insanely easy to make and very tasty, but it’s ZERO points on Weight Watchers!

I call that a win all around.

Today is the last day of the Fall Seasonal Simplicity series (whaaat??!), and I’m excited to be joining up with a group of 25 tremendously talented bloggers to share a fall chicken soup recipe with you! Check out all the wonderful belly-filling ideas at the bottom of today’s post.

This instant pot chicken soup recipe has been on REPEAT for me that last few weeks, and the best part is how simple but yummy it is.

Adding the lemon and garlic seasoning to the chicken as it cooks creates a natural chicken broth, that I then supplement with the canned diced tomatoes, water, and more garlic spice. Fill it up with lean chicken, veg, and beans, and you’ve got yourself a balanced and healthy lunch that warms you up from the inside out.

You could also serve it with some fresh bread for a nice family lunch on the weekend, or even as a quick weeknight dinner! I love the big mixed garlic seasoning from Costco so that is what I use for my main soup flavouring.

Instant Pot Chicken Vegetable Bean Soup

This is a quick and easy recipe that is full of healthy ingredients and perfect for filling up with on a fall day.

Cook Time 30 minutes
Total Time 45 minutes
Servings 8 servings

Ingredients

  • 6-9 chicken breasts, frozen
  • 2 lemons, fresh
  • 1/4 cup garlic seasoning, mixed
  • 1 can diced tomatoes
  • 1.5 cups celery, carrots diced
  • 1 bell pepper
  • 1 can black beans, rinsed
  • 1 can chick peas, rinsed

Instructions

  1. Begin by cooking the frozen chicken breasts in the Instant Pot.  Layer them in the pot, squeezing fresh lemon and shaking garlic seasoning over the chicken breasts between each individual layer.  Use the poultry setting to cook the chicken breasts.  

  2. When finished, use a fork to pull out the chicken breasts and set aside.  

  3. Add the carrots and celery, diced bell pepper, canned tomatoes, and beans and chickpeas.  Fill the 28 oz tomato can with water two times and add it to the instant pot, along with some more of the garlic seasoning. 

  4. Cut or gently shred the chicken breasts up.  Depending upon how many you cooked, you miss wish to reserve some for a different meal during the week.  Add back about 4-5 of the cooked chicken breasts, once cut up.  

  5. Set the Instant Pot to "soup" or "stew" setting and let cook until all ingredients are mixed.  Serve immediately with fresh herbs, parmesan cheese, and freshly ground salt and pepper.  Alternatively, set aside to cool and then freeze or serve for lunches throughout the week.

  1. I would like to try this soup, but I don’t see that Costco Garlic Seasoning Mix online. Do they still carry it?

    1. Hi Susie, It’s just called “Garlic Plus” but I think you could substitute any general garlic plus type seasoning for that brand! Hope that helps:)

    1. Hi Ruth! Great question – I should add that to the post. I think you could do any kind of mixed garlic seasoning and maybe add some onion seasoning, black pepper, and parsley.
