Gin Raspberry Soda with Homemade Sugar-Free Simple Syrup

Today I’m sharing a delicious and light summer cocktail recipe: a refreshing gin soda cocktail made created with homemade sugar-free raspberry syrup (using simple syrup made with Stevia).

Summer is just around the corner.  Right?! It must be!  I know it will arrive despite the fact that our June has been unseasonably cool and much cloudier and rainier than usual (or at least than we’d hoped for!).  Summer days are on the horizon.  And with the warmer temps comes the need for refreshing summery drinks.

This year I’ve been off refined sugars and watching my carb intake since February, so I know that any summer cocktails need to include very little sugar in order for me to enjoy them.  And since I love all things raspberry and lemon, I decided to try making my own simple syrup using sugar substitute (I used splenda/stevia) as well as some natural raspberry and lemon flavour (both of which are lower in carbs in small amounts).

I love how this drink turned out – super light and refreshing with a hint of tart, sweet, and fizz.  Perfect for a hot summer day!

To make this, fill two (or more) glasses with ice and then add 1.5 ounces of good quality gin, 1.5 ounces of raspberry simple syrup (recipe below), a squeeze of fresh lemon, and top it all off with soda water.  You can use a raspberry or citrus flavoured soda water if you want more of that flavour, or plain soda water to keep it lighter.  I personally love my raspberry lime Nestle PureLife so that is what I used for these ones, but I will experiment with different types of soda over the course of the summer.

To make the sugar-free simple syrup (or at least, it’s free of refined sugars though it will have a small amount of natural sugar from the raspberries and lemons)…

Sugar-Free Simple Syrup with Raspberries and Stevia

Course Drinks
Cook Time 15 minutes
Servings 1 cup

Ingredients

  • 1/4 cup Stevia/Splenda
  • 1/2 cup water
  • 1 cup raspberries (frozen)
  • 1 slice lemon

Instructions

  1. Heat the water over medium-high and whisk in the stevia/splenda until it fully dissolves. Add the raspberries and turn down to simmer. Add the lemon slice and cover, simmering and watching carefully. Simmer on low for about 15 minutes. Allow to cool, and then strain to remove all solid pieces. Let the syrup cool fully in the fridge before using in the drink recipe.

Sugar-free Gin Raspberry Fizz

A light and refreshing summer drink made with sugar-free simple syrup, raspberries, lemon, gin, and soda.

Prep Time 3 minutes
Servings 2

Ingredients

  • 3 oz sugar-free (raspberry) simple syrup
  • 3 oz good quality gin
  • 1-2 cups ice
  • 1-2 cans soda water (plain or raspberry/citrus flavourited)
  • 2 wedges fresh lemon
  • 3-6 raspberries to garnish

Instructions

  1. Fill 2 glasses with ice cubes. Add 1.5 ounces of gin and 1.5 ounces of the simple syrup to each. Squeeze some fresh lemon into each glass, and top with soda. Garnish with some frozen raspberries and lemon and enjoy!
