Raspberry Lemonade Vodka Slushies & Pink Poolside Drinks

Today I’m sharing a simple and delicious recipe for raspberry lemonade vodka slushies which are the perfect pink poolside drink to cool you down on a hot summer day.  

Whew.

It’s been HOT around here the last couple of days.  Like, 37 celsius (which is over 98 Fahrenheit).  Trudging through super hot school days is making me even more excited about summer.  We’ve got two weeks left in school, I’m definitely gearing up for some poolside afternoons in the very near future.  So when a few of my blogging friends asked me to join them for a pink poolside drink hop I was excited to come up with a new recipe (or two!) that I can share this season.

I love creating fun, frosty and refreshing summer drinks, and I definitely thing I’ve hit a homer with this one (sorry, there’s been a LOT of baseball in my life the last few weeks).

But don’t take my word for it; give it a try and tell me what you think…

Lemonade is one of those quintessential summertime drinks.  My kids LOVE it when I make homemade (or even buy store bought) lemonade.  One of my favourite summer drink recipes is my knock-off Italian herbed lemonade (which is amazing made into a cocktail with either gin or vodka).  But as soon as the word pink was mentioned I knew it would be all about red raspberries.  I mean, who doesn’t love raspberry lemonade?!  Such a fun twist on an old classic.

The secret to making vodka lemonade into a slushy is to use some real fruit (frozen raspberries in this case) as well as freezing the lemonade ahead of time in some ice cube trays.  That way you don’t end up with a glass full of watery slush at the end.  I promise; it makes all the difference in the world and it really is a super easy thing to do!

Throw your frozen lemonade ice cubes into the blender along with your vodka, real frozen raspberries, and some more lemonade (or a bit of water for less sweetness)… blend… and go!

Delicious, slightly tart yet slightly sweet and refreshing all at once.  My favourite kind of summer refresher.

Raspberry Lemonade Vodka Slushies

A delicious and refreshing summer drink recipe.

Course Drinks
Prep Time 2 minutes
Servings 2 glasses

Ingredients

  • 2 oz raspberry or regular vodka
  • 1 cup frozen raspberry
  • 1 cup lemonade ice cubes see instructions
  • 1/2 cup raspberry lemonade

Instructions

  1. Make raspberry lemonade ice cubes a few hours to a day before making these by freezing raspberry lemonade (store bought) in an ice cube tray

  2. Add the lemonade ice cubes, frozen raspberry, vodka, and liquid lemonade to a blender. Blend until smooth, adding water and/or more lemonade (depending on the desired sweetness) to liquify the mixture to slushy form. Add additional vodka as needed, depending on how much additional liquid you add.

  3. Serve immediately in chilled glasses, garnishing with a wedge of fresh lemon.

Recipe Notes

If you have not pre-made lemonade ice cubes, you can substitute regular ice cubes and use more liquid lemonade for the flavour (versus regular water).

  1. Oh, wow, I didn’t know you were getting those kinds of temperatures already. It was 29 here today, which was nice, but pretty hot. A great day to enjoy one of your adult slushies!
