Caramel Apple Phyllo Bites & 15 Fall Apple Recipes

Today I’m sharing a simple and delicious fall recipe reminiscent of a classic caramel apple: caramel apple phyllo bites are the perfect way to celebrate apple season.

This past weekend was the “fall fair” in our little town. It’s a pretty big deal around here. Kids love all the rides on the midway, along with seeing the farm animals in the barn. There is a lively parade, and someone wins a car every year in a big draw.  Oh, and you can’t forget the giant lemonades and all that sweet cotton candy.

I always remember looking forward to getting a yummy caramel apple at the fall fair when I was a kid.  Honestly, I’m not sure if they still sell them there anymore, I don’t think I saw a single one floating around this year.  But we do have an amazing little local candy store that makes some incredible caramel apples.

I’m not generally a huge sweet-dessert fan, but I do love all things caramel. And the way that mixing caramel with apple adds that slight fresh, tart element and helps to perfectly cut the sweet of the caramel…well what more can I say?  What could be better?

Oh wait, how about adding some crisp phyllo to the mix?! Um, ya… this one is definitely worth a try…

Even though they are such a common fruit, apples are truly one of my faves.  We are never without them in our house; the apple bowl is always full in our kitchen.  And I absolutely adore any desserts made with apple… or any fruit based dessert, really.  But the mild sweet and tart freshness of apples mixes perfectly with caramel sauce in this simple easy recipe…

They ar super easy to whip together! Perfect for dessert after a lovely fall meal. I could see these following pork roast with yams and roasted brussel sprouts…

Caramel Apply Phyllo Bites

Delicious phyllo pastry cups stuffed with baked apples and caramel sauce.

Prep Time 15 minutes
Cook Time 15 minutes
Servings -1

Ingredients

  • 5 sheets frozen phyllo pastry dough
  • 2 apples, peeled and diced
  • 1/2 cup caramel sauce
  • 1/8 cup butter or margarine

Instructions

  1. Preheat the oven to 375 degrees.

  2. After the phyllo dough sheets have defrosted according to the package directions, cut the sheets into squares or rectangles large enough to sit inside and poke slightly above the muffin tray cups.

  3. Melt the butter or margarine in the microwave. Using a pastry brush, gently coat the insides of the mini cupcake/muffin tray.

  4. Layer the cut pieces of phyllo pastry into the muffin trays, 1-2 sheets thick at a time. Gently brush with margarine between layers, doing a total of about 5 layers of phyllo pastry sheets to form the base.

  5. Dollop about 1/4 tsp of caramel sauce into the bottom of each muffin cup, then top with the diced apple. Dab about another 1/4 tsp of caramel sauce on the top of each cup, and gently press the phyllo pastry sheets down onto the apple and caramel so it's still slightly open at the top. Brush with a thin layer of the butter/margarine.

  6. Place in the pre-heated oven for about 15 minutes, watching for the phyllo to crisp up and brown. Cook longer if using large muffin trays rather than the mini trays used here.

  7. Cool, then remove gently with a spoon and serve. These would be delicious with a dab of ice cream or whip cream, but are also amazing all on their own.
